Delicious Organic Pancakes

I woke up way to early the other morning after dreaming about going to IHOP and wanted pancakes.
So, at 5:30 am I whipped up some homemade ones. They were so easy and absolutely delicious.
Recipe below:
1 1/2 cups Einkorn 100% Organic Flour (can by on Amazon) #ad https://amzn.to/4md8pOg
31/2 teaspoons Rumford Baking Powder
1 tablespoon organic sugar
1/4 teaspoon salt
1 1/4 cups Organic Milk
3 tablespoons Kate's Organic Butter (melted)
1 large Organic Egg
Blueberries, Raspberries, or any fruit of your choice
Vermont Maple Syrup
In a medium bowl combined flour, baking powder, sugar, salt and mix together.
Then add, milk, melted butter, and egg. Mix very well. May have small lumps.
Add about a cup of your choice of fruit. (I like a lot in my pancakes)
I divided the batter in two and made one batch of raspberry and one batch of blueberry pancakes.
In a large skillet over medium-low heat, spray with avocado oil and pour your desired amount for your pancake size. I used 1/3 cup for each pancake.
They do cook rather fast.
Top with more of Kate's butter and maple syrup.
